If you’re familiar with the restaurant 99 Park then you know how much fresh, local ingredients matter to owner Micah Pittman. In March he’ll be opening a coffee shop, Fika House Kafe, that takes local produce just as seriously. Located at Soma Towers in Downtown Bellevue, Fika will feature direct trade coffee, house-made syrups from local ingredients that will change seasonally, and sweet and savory waffles. Pittman says the waffle dough combines farm sourced bacon with Beecher’s cheese. Then they caramelize the tops to perfection. Here’s everything we know about Fika so far.

The Meaning of Fika: It’s a Nordic term to have a coffee break often accompanied by a pastry.

The Coffee: Fika will offer seasonal, directly traded coffees from around the world. The menu will be showcasing specialty coffees, espresso, espresso based drinks, coffee flights, and unique teas. Pittman has teamed up with Slate Coffee Roasters to offer the best of the best.

The Craft: Pittman and his team are all about enhancing the coffee drinking experience by bringing principals of gastronomy and mixology into every cup. But the key to great coffee starts with great ingredients. Fika will make seasonal syrups in house from fresh produce.

The Waffle: The Fika Waffle was developed by Pittman and will come in multiple flavors including original, savory and sweet. They are meant to be nibbled on as you sip your coffee.They’ll also have scones with clotted cream and jam.

The Booze: Fika won’t be just a morning coffee shop. They’ll also serve Washington beers and wines.

The Space:  Fika will be relatively small. It will seat about 12-14 people at a time. Most of the business is designed for takeaway. But the space itself will be “pretty” as Pittman puts it. Nordic inspired interiors, clean lines, earth tones, and natural wood.

The Opening: Pittman is hoping to open Fika March 19 or 20. We’ll be sure to keep you posted on an opening date as we hear more. In the mean time, just fantasize about those fluffy waffles. Yumm.
