Beecher’s Homemade Cheese via Facebook

Seattle’s favorite artisan cheese shop is hopping across the lake. Beecher’s Handmade Cheese is coming to Bellevue Square. As of now, opening dates have not been set, as construction is still in the beginning stages.

The new storefront will be the third retail location for Beecher’s in Washington and the first on the Eastside. Beecher’s has one storefront in New York City’s Flatiron District. Bellevue city permits currently have the store front slotted for 126 Bellevue Square, which is presently host to Specialty’s Café and Bakery.

Beecher’s is known for their signature cheese, called Flagship, made from semi-hard cow’s milk and is aged for 15 months to create a complex nutty flavor that has just the right amount of crumble. Beecher’s is also known for making folks go gooey over mac and cheese. Their ‘World’s Best Mac and Cheese’ uses Flagship and Just Jack cheeses, and a pinch of spice to smother penne pasta. One can also opt for mac and cheese with savory pork and mushrooms or gluten-free kale and brown rice gratin.

Beecher’s Cheese was founded by Kurt Beecher Dammeier, and opened in Pike Place Market in November 2003. In addition to selling cheesy goodness, Beecher’s products include meats, vegetables, and other café items.
