A sweet treat is coming to Bellevue in April. Beloved ice cream company Ben & Jerry’s will be replacing Baskin-Robbins on the first level of Bellevue Square, across from McDonald’s. The ice cream shop will offer the full selection of imaginative Ben & Jerry’s ice cream flavors, new and old. There will also be new flavors of non-dairy frozen desserts like Chocolate Fudge Brownie, P.B. & Cookies, Chunky Monkey, and Coffee Caramel Fudge in pints.

“The style and innovation of Ben & Jerry’s is perfect for Bellevue Square,” said Jennifer Leavitt, vice president of marketing at The Bellevue Collection, in a statement. “They will be a delight to kids and adults of all ages and be the perfect spot for a break between shopping or for an after-dinner treat.  We are excited that they will be joining The Collection and look forward to tasting the Brownie Batter and all of their creative flavors.”

The Eastside is anticipating a big spring for ice cream. Owner of Molly Moon’s, Molly Neitzel, announced that she would be opening a Redmond shop this spring. Molly Moon’s Redmond will be located next door to Homegrown Sustainable Sandwich Shop. The two are partnering to offer Molly Moon’s ice cream sandwiches. The partnership will produce a selection of vanilla bean, Stumptown Coffee, melted chocolate, or mint leaf, sandwiched between two sour cream-chocolate chip cookies.
